- 2 cups cooked rice (day-old works best—trust me!)
- 2 tbsp neutral oil (e.g., canola oil)
Things that you've to cut
- 2 small shallots, coarsely chopped
- 3 cloves garlic, minced
- 1 fresh chili pepper, deseeded and chopped
- 1 cup mixed veggies (peas, carrots, corn—whatever you've got!)
Prepare the chicken
- 200g chicken (you can use boneless, skinless chicken breast or thighs)
- Sesame oil (about 2-3 tablespoons)
- Curry powder (about 1-2 teaspoons)
Prepare the sauce
- 2 tbsp kecap manis (sweet soy sauce)
- 1 tbsp fish sauce
- 1 tsp light soy sauce
- 1 tsp coconut oil - optional
- 1/2 tsp terasi (Indonesian shrimp paste) - optional
Step 1: Prepare the Spice Paste
- Blend together shallots, garlic, and chili to create a flavorful paste.
Step 2: Sauté the Aromatics
- Heat oil in a wok over medium-high heat.
- Add the onions, chili, and garlic to the wok and sauté until they are fragrant and lightly browned.
Step 3: Add the Chicken and Rice
- Add the pre-seasoned chicken (marinated in sesame oil and curry powder) to the wok and stir to combine with the aromatics.
- Add cooked rice to the wok, breaking up any clumps with a spatula.
- Stir-fry the rice and chicken mixture until everything is well combined and cooked through.
